Doe's anyone have a recipie for pumpkin soup.

30 grams / 1 oz of butter
1 medium onion finely chopped
2 cloves of garlic crushed
3 cups of chicken stock
1 tablespoon of tomato paste
1 tablespoon of grated parmesan cheese
salt and pepper to taste
Chop the pumpkin into large cubes discarding the skin and seeds. Sweat the onion and garlic in butter in a large saucepan until the onion is clear. Add the pumpkin and garlic and sweat for a minute. Add three cups of chicken stock and the tomato paste, cover and simmer for 20 minutes or until the pumpkin is tender. Rinse a blender in boiling water to warm and blend the soup mixture. Serve sprinkled with grated Parmesan cheese.
This soup can be made two days in advance and can be frozen for two months. Add the cheese when re-heating just prior to serving.
here's a variation
I can pureed pumpkin
1 large baking potato
1 large onion
2 veg stock cubes
4 oz butter
salt and pepper
Peel the onion and potato and cut into chunks. Sweat in the butter until soft then add about a pint of water and two of the stock cubes. Add the can of pumpkin puree and stir in then simmer till the other vegs are tender. Liquidise until smooth. Season to taste and add more water if too thick, you may bneed to add the other stock cube as well. Serve with a swirl of cream for added yum.
This is great used as a sauce to cook chicken in, just brown your chicken pieces in a little oil, dump in an over proof dish and cover with the soup. cook on about gas 4 for 40mins to 1 hour till the chicken is tender. Serve with the veg of your choice and rice, crusty bread or mashed potatoes
