I will be travelling back from New Zealand via Hong Kong with Air New Zealand in the New Year, and would like to know what the facilities are like as I will only be in transit. Will I be able to visit the shopping facilities?

Yes you will (if you have time, some stops are less than 1 hour). You will need to go up one level and through security, and you will then be in the departure area. Gates 40-60 are at the far end, the better shopping is around gates 01-24. There is a shuttle, or it is about a 10-15 minute walk if you are at the wrong end.

Depends what you are looking for, but it is bascially the same as most large airports. Shanghai Tang has some nice silk stuff, but it is starting to get pricing as the names catches on.

the usual stop is two hours, but of course if the first flight is late that may be reduced.
