Put off eating new mollusc (5)

Answer given is SNAIL

I cannot work out why.

Obviously a snail is a mollusc and possibly the N can be for NEW but other than that, can anyone explain please?

The rest of snail without the N is sail - one way of saying sail is 'put off'.
