I have a Salmon fillet in my freezer, quite good quality, with the skin still on. Does anyone have any suggestions about what I can do with it, i.e. sauces or recipes etc, to liven it up? The cheaper and easier the better, as I am a student! Thanks.

one fresh lime, one chilli, a knob of butter.
Defrost the salmon, finely chop the chilli, grate the skin of the lime, squeeze the juice of the lime out, mix the chilli, lime skin and juice into the butter, spread the butter on top of the fish. Bake in the ovens for about 20 mins, serve with grilled peppers and rice.
Quick and delicious
When salmon is defrosted, grill until pale pink. Then cover the top with red or green pesto (from a jar) and grill until heated through. Very tasty!
One of my favourite, quick and easy salmon recipes is to simply grill the salmon, and serve it with a citrus sauce.
Squeeze an orange and half a lemon into a pan, add two slices of fresh ginger, a bay leaf, and 3 peppercorns. Bring to a simmer and allow to reduce by two-thirds. Nice and simple, and it compliments the salmon wonderfully!
Skin it. Marinate it for half hour or so in a mixture of wholegrain mustard & runny honey, salt & pepper. 1:3 ratio approx. Grill on medium , turning once, till cooked, doesn't take long.
put it in a microwavable dish, add a tablespoon of lemon juice or white wine, a sprinkle of salt and pepper and a pinch of mixed herbs. put the lid on and microwave for about 2 minutes. let it stand for about 2-3 minutes and then eat. you could add a knob of butter too before you cook it, if you have any, or a dollop of mayo on top just before you eat it.
drain a tin of economy baked beans collecting the delicious sauce. Bring the sauce to the boil and leave to simmer for 6 1/2 minutes. Then add some corn flour (pre mixed with cold water). Add salt and pepper but careful how much you add so you dont ruin the delicious taste. When it is nice and thick and lovely pour it over the grilled salmon. The taste is unbelievable.

Hope this helps
