Hi all, We are having a family evening get together on St Patricks Day and I was wondering if anyone had any good ideas/recipes on what we could do for a traditional style Irish meal. Thanking you :o)
I use Gary Rhodes Colcannon recipe all year: Boil your spuds & mash, meanwhile boil kale or cabbage for 2-3 mins `til soft - but NOT coloured, drain. Fry chopped leeks or (pref) spring onions in 1oz butter for a few mins until soft, add kale/cabbage for a FEW minutes more. Add mashed spuds, salt, pepper, ground mace & milk or cream & a little more butter (if cals not an issue). He recommends bangers or a poached egg on top to serve.
Try your local library or bookshop for 2 v. good books.
1) Irish Traditional Cooking by Darina Allen,
2) Gourmet Ireland by Paul Rankin.
Both contain hundreds of recipes e.g. Cheese and Scallion (Spring Onions) Soup, Soda Bread, etc.etc.
