White fish, parsley sauce + Leeks?

good afternoon, I hope you're Sunday is as pleasant as mine.
Would any of you recomend serving Leeks alongside white fish (Coley) and parsley sauce, or am I as my good lady suggests a deranged lunatic?

There is nothing wrong in serving leeks with Coley fillets.

Yup, sounds good. Maybe some peas or carrots for a bit of colour as well.

I don't eat fish but I do love leeks... esp when served up with a parsley sauce..... If you are making the sauce from scratch, try this for extra flavour:-

To one pint of milk, add half a chopped onion, 1 stick of celery (chopped), 1 small carrot (chopped), a couple of bay leaves, 5 or 6 whole peppercorns and some parsley stalks. Bring the milk to the boil then turn it off and let it talk to its veggie friends for at least 20 minutes. Strain the veg (discard them) then use the flavoured milk to make up your sauce. It will have a lovely glossy sheen to it and taste rather nice !
