I was under the impression that all veg counted apart from things like potatos which are too starchy. A portion is 80g so, as long as you were using this much, it would count. I certainly count it when I eat it in this volume, usually with a tin of tomatos and some brocolli/other greens as a sauce for pasta or rice. Garlic would count but you'd have to eat 80g worth of cloves which might not do your social life much good!
The Department of health Website has loads of info on 5-a day, plus a .pdf file you can download ti give you a guide to the amount which counts as a portion.
