Try this... takes about 15 minutes or so prep time and cooks in the oven for aobut 45 minutes:
3 or 4 boneless pork chops
1 pound sweet potatoes (Yams will work, but need to be whole, uncanned) peeled and diced
1 large red onion, thickly chopped
1 cup Catalina salad dressing (we use Kraft's, but were in the U.S.)
1 Box prepared stuffing (preferably chicken flavored)
Salt and Pepper to taste
Brown pork chops in a couple of splashes of any good cooking oil. Remove when just browned. In same pan (with the drippings, brown the diced sweet potatoes and red onion. Add salt and pepper at this point.
Mix stuffing (we call it dressing) as directed on box.
In an aluminum lined baking dish (at least 8 X 10 inch),
place barely browned sweet potatoe/onion mixture. cover sweet potatoe/onions with the cup of Catalina salad dressing. Add the stuffing mix on top and place pork chops on top of this.
Bake in 375 degrees F (I told you we're in the U.S.) oven for about 40 to 50 minutes (meat thermometer in chops should read 155 to 160 degrees F. Remove and let rest for about 10 minutes. Serve with side of green vegetables...
