The company will have a standard flightplan for East Midlands to Malta, but there are so many factors that can cause a route to be changed - delays en-route, activity of military areas, whether or not it's a weekend - the list goes on.
From East Midlands to Malta, you'll probably leave UK airspace between Southampton and Dover and keep heading south - it depends entirely on the day. If there are delays in the middle of France, it's conceivable you'll fly over Norwich and then turn south once you reach Holland.
