Do Microsoft Word documents have a hidden "changes" log of any description, however simple in format?

If yes, how is it accessed?

Not exactly hidden. You haven't said which version but. for example, in Word 2007, you click Review/Track Changes to turn the facility on and off. Of course, you won't be able to review any changes made prior to turning it on.
