So many to choose from, but I think a simple tomato pasta goes down well!
While i'm boiling pasta of your choice (I like spaghetti)
I cook a small onion in a saucepan with a chopped garlic.
I add in a tin of tomato soup, salt and sugar to get rid of asidic taste! (keep trying to get right as I don't know how much I put in)
I thien add a little paprica, tomato puree and sometimes some chilli powder. If you want you can add spinache at this point or leave it out!
When pasta is cooked, draina nd mix all together!
Nice with fresh baguette! Yum!

We call it Leek Pasta (for 2) - boil 2 mugs pasta with a medium chopped leek. Drain when cooked. Add a tub of fresh spinach & ricotta pasta sauce and some chopped ham to the pan & heat. Add pasta & leeks and mix. Tip into a grill proof shallow dish and sprinkle with cheese. Grill until slightly brown. Serve with a large glass of red wine (or salad)!
Open out a chicken breast (Butterfly) and then flatten slightly with a pan / tenderising mallet. Spread with 3 or 4 small knobs of butter and place sliced chestnut mushrooms on it. Close it up and wrap it in Smoked bacon. Roll it in cajun seasoning (Asda's own is V. nice, however I do have my own recipe if anyone is interested ;-) Wrap the whole thing in foil like a sausage and cook on a trivet in the oven; over water to help retain moisture. When cooked serve thickly sliced with a nice fresh salad.
