Go to the will-reading. Sit down at the front. When the lawyer takes the will out of his brief-case, run up and grab it. Chances are he'll be too surprised to react.

Your ideal means of escape would be hover-boots, but unfortunately they haven't been invented (yet).

If the will has been proved, you can apply to the Probate Office for a copy (will cost �5). If it hasn't, then you aren't entitled to have a copy yet.

If the will has been admitted to probate, you can obtain a copy by using the information here:

If the will has not yet been admitted to probate you can set up a 'standing search'. This costs �5 and ensures that you'll automatically get a copy of the grant of probate (which includes a copy of the will) if it's given within 6 months. (If it takes longer for the grant to issued, you can renew the search for a further 6 months for another fiver):

I hope mamjet's reply is facetious - but just in case 'will readings' only occur in Agatha Christie novels. In real life they don't happen, particularly for non-millionaires..

The advice about the Probate Office is good, but if your question is about not being able to find the will in the first place then that can be difficult. Search her house, and ask any banks that she may have had an account with and any solicitors she may have had dealings with. Ultimately you may have to assume it just doesn't exist.
