It's actually "watershed", and the original meaning is "a ridge of high land dividing two areas that are drained by different river systems" but it has come to mean any major division between two different zones or a turning point. In British TV terms, it usually means the time - 9.00pm I think - at which TV producers can stop worrying whether children are watching, and can show programmes containing sex scenes and bad language.
