How can we answer this when we have no idea about your trip.
Which part of Florida are you going to, it is a big place. I assume Orlando and the theme park area, but have no idea.
How long are you staying for, are meals included in your trip or do you have to buy all your meals, do you already have tickets for theme parks or are you going to buy them when you get there, are you hiring a car or will it be buses and taxis, do you plan to buy clothes and other things while you are there.
Most people use a combination of some cash, some tavellers cheques, and a credit card.
Give us some idea of what you plan to do and we can try to give a helpful answer.

If you are doing the theme park 'thing' then sort out tickets before you go! Each park cost approx. �35-40 so the multi park tickets you buy in advance can be good value. Food in restaurants is approx. half what it costs here. If you start buying clothes and shoes then you will never have enough! We go regularly and budget �1,000 (2 adults, 2 kids) for 2 weeks and easily spend it (and more). Have a great time.
as much as you can afford, especially as clothes etc are so much cheaper. Take what you can and work out a budget from that, do you have credit cards ?
You will have a great time with �500 each but there is always room to spend more, but one of you should take charge of the money, especially if you are going for 2 weeks, budget 35 $ dollars a day per person for food, then there are refreshments during the day, its hot and you will gt thirsty, so say $50 dollars a day to cover all, then there are your theme park entrances, try and by your tickets before you go and thats another expense out of the way, your girlfriend wont be allowed to drink in any bar because she is under age but you can buy from a liquor store if you show ID. I could go on, planning ahead is the best idea. If you intend to go mad buying clothes then dont travel with too many and buy as you go along, put one smaller case inside your big case to get the stuff back.

you will never do all the theme parks in a week! as others have said, get your tickets beforehand. If you are planning on eating out and drinking every night as well as all your meals through the day , I would take �1500- to �2000 pounds for both of you. With it been such a good exchange rate at the moment you will get $3000 - $4000 dollars for that approx. It may sound like alot but contrary to what many people say eating out in Orlando is not cheap especially alcohol unless you are buying it from a supermarket. If you eat at budget restaurants like Ponderosa and places like that it isn't too bad but the likes of Planet Hollywood and anywhere else at Downtown Disney is very expensive. As is Universal's Citywalk
