How do I make a blueberry cake or blueberry muffins?

Here is my Blueberry muffin recipe ( by mine I mean the one I liberated from a certain Mrs Ramsay ):

340g Self Raising Flour
150g Light Brown Soft Sugar
6.5 fl oz Buttermilk
4.5 fl oz Veg Oil
1 Egg ( Beaten )
150g Blueberries

Sift together the flour and sugar then add the buttermilk, oil and egg. Mix thoroughly then add the blueberries. Divide into 12 cases and cook for about 30-35 mins at GM5.

Thanks Nik, I will try that out. Shouldn't your recipe include vast quantities of swearing also? ;-)

DON'T mix thouroughly...(sorry ,nik315).....muffins are not the same as cake, and they benefit from being undermixed ...you should be able to still see some flour in the mix-then they will be light and fluffy.

Googling the Italian recipe name will give you one version of the recipe in French, I can't find an English one online.

The recipe's in his Italy book, of course.
