Couscous Cake
12 Syns for the whole cake
6oz couscous
4tsp cocoa (2 Syns)
3 eggs
10tbsp (150ml) sweetener
1tsp vanilla essence
2tbsp Camp Chicory Essence (3 Syns)
1oz chocolate chips (7 Syns)
Put the couscous into a bowl and top up with boiling water 1cm higher than the level of the couscous. You can add the cocoa, vanilla and Camp at this stage to ensure it all soaks into the couscous but you can always add it later as well. Leave to stand for 5 min.
Meanwhile beat the eggs and the sweetener together. Add to the couscous. Lastly (and most importantly!) add the chocolate chips. Fill the dough into a small lined baking tin or lined Pyrex dish and bake at 180�C (fan assisted) or 200�C (conventional) for 25min.
