For more on marking an answer as the "Best Answer", please visit our FAQ.Actually I think its an instrumental version of the song "It is You" which is performed by Dana Glover over the end credits of the first film and seems to be the shrek 'theme' as it were. The arrangment at the start of shrek 2 does sound a little like Hallelujah for a moment though.
Incidentally, whilst Rufus Wainwright version of Hallelujah appears on the Shrek 1 soundtrack, it is John Cale's version of the song that is actually used in the film. Don't know why they changed it though.
