I've just sliced some chicken breast and marinated it in garlic. ginger, chillies, tandoori spice & yoghurt, alst & pepper. going to fry it in some onions later, add rice, stock and have an all in one meal this evening
Mix some butter, garlic and parsley together. Cut a slit lengthways along each breast and put the garlic butter in the slit. Wrap each breast in streaky bacon and cook in the oven. It makes the chicken really moist and tastes lovely.
Cook onions and fenal in a casarolle dish, add carrots and place in chicken breasts. Add in a 500ml bottle of ale and top up with chicken stock so it covers the veg and chicken!
Shove in oven for 1 hour (maybe another 1/2 hour so the sauce is thick!)
Bake in the oven, topped with sliced peppers (different colours if poss), red onion, olive oil and balsamic vinegar.
Or
Rub in some Schwartz chargrill chicken dry rub, put breast in a baking dish, pour over a tin of pineapple plus some juice and bake.
Or
Cut into strips and stir fry with peppers, mushroom and onion, and fajita or enchilada mix, spoon onto tortilla, top with refried beans, wrap, put into oven dish, cover with passata and cheese and bake.
3-4 bone-in chicken breasts
1 c Italian dressing (or vinaigrette of choice)
1 package dry onion soup mix
1 28 oz can of crushed tomatoes
1 package sliced fresh mushrooms
� t basil
� t oregano
3 bay leaves
Place chicken in an oven-proof dish (Pyrex).
Place sliced mushrooms on top, along with tomatoes and bay leaves.
Mix Italian dressing with onion soup mix � and pour over chicken.
Sprinkle with basil & oregano.
Bake 1 hour uncovered at 350˚, basting frequently.
Serve with steamed rice.
fry a clove of garlic in a small amount of oil, add soy sauce then add some chopped spring onions, add some 2-3 spoonfuls of honey fresh orange juice and then a sliced orange, simmer gently for 5 minutes then pour over the chicken breast put in oven for 45 minutes at meduim heat then serve with jack spuds and salad, i love it
