Can you freeze potatoes.We have been given a large sack and have given away alot but we still have many left and will not be able to use them all , any ideas please.Thank you Ps they are old ones.

For more on marking an answer as the "Best Answer", please visit our FAQ.you could wash them and then cut them into wedges with the skin still on, brush them with oil and then roast loads of them at the same time. wait for them to cool and then freeze them. i think that's what i would do, little effort and minimum fuel used, and lots of wedges to have when you need them.
Yes, freezing mashed potatoes is an excellent way of saving them. They go very well in stews and casseroles - they 'disappear' but thicken the gravy and of course you are still getting all the nutritional value.
Frozen mash also works well on shepherds pie, no need to thaw before putting in the oven.

you could also keep some in a container with soil in a cool dark place but I don't know how long they would last.

Sometimes I'll make up an entire 5 lb. bag of potatoes into "twice baked" potatoes and freeze them. (Vacuum Sealed) I (poke them with a knife to let the steam escape) bake them until tender on Convection, split in half and scoop the insides into a big bowl. I'll add sour cream, carmelized onions, maybe some very crispy bacon. I also like to add broccoli or ham, with cheese. Really, you can make them however you like. Then I freeze them and vacuum seal. These have come in handy for a quick meal more than I can count, and they're already portion controlled.

If they're beginning to have shoots then try the following - put a layer of compost in a black bin liner (or large plant pot) put in a few spuds, cover with more compost. When the leaves come through cover with even more compost keep doing this untill you reach the top of the bag. You'll have lovely new potatoes for Christmas dinner. Keep them frost free and well watered.
