I noticed in today's paper, that M & S are offering a �10 voucher for every �250 worth of travel money exchanged. If I want �500 worth, do I get 2 x �10 vouchers? Or shall I go in for �250 worth and an hour or so later, my husband goes in for �250 worth? If you only get one voucher for �500 it seems daft to me, twice the paperwork for them !! Has anyone tried it yet?

no, but I assume it means what it says: for �500 you get two vouchers. It's like Tescos giving a computer voucher for every �10 you spend - spend �50, you get five.
Unless I am being extremely dumb, the answer to your question is clearly stated in the first sentence of your question.

" a voucher for every �250 or more worth of money exchanged "
There is no need to return to M&S to buy two lots of �250 foreign currency � simply announce that that you want to buy �500 and ask whether you will receive two �10 vouchers.
If the answer is no, then ask for two lots of �250, as separate transactions.
