Ice Cream Machine
I received, as a present 6 months ago, a basic ice cream machine - the sort where the bowl goes in the freezer and the contents are chilled before putting in the machine for churning - but I have yet to use it. Although it came with a recipe book I was wondering if any ABers had any quick and easy, tried and tested, recipes for sorbet or ice cream so that this novice, who has a long weekend coming up, could give it a go.

For more on marking an answer as the "Best Answer", please visit our FAQ.If you want to make really quick and easy ice cream the best thing to do is to buy some really good quality ready-made custard (I use M&S ). let it churn to get almost frozen then add your own favorite flavours. Here are some of mine
1) crushed and whole rasps for raspberry ripple. also works with strawberries/blackcurrants/gooseberry etc, but you may want to add some sugar to the fruit and cook it down a liitle first
2) chocolate sauce and choc chips
3) melted white chocolate and whisky
4) toasted brown bread crumbs, cinnamon and honey
5) mango & passionfruit (push the fruit pulp through a sieve first.
6) any crushed cookie or sweeties like chopped up fudge.

Mine is quite simple too just take 6 egg yolks approx 6 tablespoons sugar (you can add more later if not sweet enough sprinkle of vanilla essence and one and a half pints of double cream ( i have used half cream and half milk but it is better with cream and has to be double) beat the egg yolks in a bowl heat the cream and sugar with the vanilla essence to just before boiling add to the eggs whisking all the time set aside to cool and then put it in you ice cream maker as per instructions. As I said earlier tast the custard and if not sweet enough add more to taste. thuis is lush have tried many times but make sure you only use the yolks.
I feel the same way about the whites, I don't like to waste anything. The whites can be frozen. Just put them in a small container with a lid. I don't know how long you can keep them in the freezer, I've got some in there from the last time I made this ice cream. It's a recipe I've developed over the last couple years. Was never quite satisfied with the recipes I had found. You'll need to experiment until you find one you'll really like.
