Polton Cake? Fruit cake with beer.
4 Answers
Bought a fab cake from school fete and the lady who made it said it was a 'Polton Cake', all ingredients where warmed in a saucepan with a good slug of beer, flour added then put into a loaf tin and baked..... cannot find any firm recipe of ingredients or measures on google. Wondered if anyone else has heard of this cake or even got a version of it. Tastes like a cross between a nice rich dark fruit cake but similar texture of bread pudding!

In a saucepan heat gently 8oz dried fruit,4oz butter/marg,1 mug sugar(i use muscavado but white will do) and 1 mug of liquid(i've used strong tea, rum, brandy, sherry. I guess beer would be ok too.Guinness or a real ale would be great!).
When the sugar & butter have melted, cool and then mix in 2 mugs SR flour and 2 beaten eggs.
Put in cake tin and cook at 180c for approx 1 hour.
Makes a lovely quick fruit cake and if you use all alcohol will blow your socks off!!!!
