What would you do with it? Other than sandwiches that is. It's the darker meat from a pork loin.

Have it cold with chips, beans and beetroot. Yummy

As per Jillius but i have it with bubble n squeek and lashings of pickle as well.

I mince it with some onions and add some mash and make them into patties coat them with breadcrumbs and fry till golden brown serve on thier own or with chips or salad. You could add left over veg

With chips, runny fried egg and mustard.

Fry in batter and have with sweet & sour sauce and rice.

I freeze mine, as a leg of pork is really too big for just K. Jnr & me. Then I use it in stir-fries or curries. It freezes well.
