My friend, who is vegetarian, has just discovered that the enzyme rennin, used in curdling cheese at manufacture, is an extract from the lining of calf's stomach. Needless to say, she has stopped eating cheese on hearing this. Are there cheeses available where no animal extract is used in the manufacturing process?
As the others have said, most cheeses these days are made using veggie rennin... it is exceedingly rare for a cheese maker to use the animal products. Just look for a little *v* on the packet or label. I am surprised that your friend has only just discovered this,,,, we (in the veg society) were campaigning about this very point about 20 years ago !
Thanks everyone for the helpful answers. I have located cheese with the vegetarian symbol in Sainsbury's this evening....and educated some of their young staff (using your wisdom) in the process!
