I have an Epson printer is it possible to go away from the factory defaults eg type of paper and the size (4"x6")so that I don't have to keep changing them as I normally use one type of paper and one size of photo? Thanks!!!

Go to the printer's properties and click the advance tab. Set the paper type, size and any other changes you want as default. Make sure you press the 'save settings' and give it a name - save the name and now there should be a new custom printing icon on the properties that you just made and should come up every time you start the 'print' option as default.
