We've recently made friends with a couple and wish to invite them for lunch or dinner. However, she has coeliac's.
can anyone suggest suitable menus?
One of our ideas uses a sauce which has amongst its ingredients modified tapioca starch. Is this gluten free and so suitable?

I'd suggest nice fresh dishes eg...
Starters
Beef tomato and buffallo mozzarella
Shredded duck with leaves and sweet chilli sauce.
Mains
Stuffed peppers and/or veg roasted in the oven in olive oil with meat of choice.
Stuff a rainbow trout with veggies then wrap in foil and oven bake.
You could do a spanish style rice, put rice in a microwaveable jug and cover with water, add some turmeric (makes it yellow), season and stir then in the microwave for about 9 mins (watch there is enough water so it doesn't dry out and burn). You can also add things like lightly done peppers, mushrooms and courgettes.

Make sure to check anything else you might use such as sauces, dressings, stock cubes etc...for anything with gluten in.
