I hadn't been in my job for 3 months when I got my mortgage, I just showed them my offer letter / contract.

This was 5 years ago though and may well have changed since, especially in the current climate as lenders are tightening up on who they lend to.
At one time mortgage lenders were stringent in their requirements and checks re income. Then they became less so which is why they are in the mess they find themselves now. I think you will find that you will once again require to prove your job and income is established and stable - not something you can do after a month.
