has anyone tasted ostrich,goose,duck,quail eggs? what do they taste like?

We have several geese and a few ducks here on the ranch in the western U.S. (Geese are better at alerting about intruders than even our dogs). On occasion we have a goose egg, usually fried like chicken eggs. Even more occasionally we have a duck egg. The yolks are a deeper yellow, much like brown chicken eggs, but I think that's more from their diet, since they eat a lot of cracked corn. The eggs are very much like chicken eggs as to taste... maybe slightly stronger, but not unpleasant.... We also have turkeys and utilize their eggs as well... about the same report for them...

We had ducks eggs this morning. They were lovely. No one could see or taste any difference between them and hen eggs, Certainly no strong flavour (as Clanad has pointed out.)The butcher from the farmshop I go to says that turkey eggs taste the same as hens eggs, you just get a bigger portion!!.
Don't be afraid to give them a try.

They do say that they don't keep as well as hen eggs as the shell doesn't protect the yolk as well.

Some people claim that where ducks have access to open water for swimming around and feeding off the bottom that this can make the eggs taste slightly fishy.

Hi blackalbino, only getting back to you now. I paid �1.50 for 6 duck eggs but pay �1.25 for free range hen eggs. The turkey eggs were selling for 25p each 3 mths ago but maybe a bit more now.
Still have to say we've never detected any strong/fishy/unwanted flavour from duck eggs.It took me a looooong time to try them , then realised how narrow minded or afraid I was to give them a go. I now buy them when I see them.
Still am working on buying the turkey eggs to try!! I haven't seen goose eggs on sale, so can't really comment.
BTW I'm quoting prices I paid in Co Antrim.
