I've just had a bowl of tomato soup, and a crusty roll. Lovely.

'Leek & Potato' but my all time bestest one is their 'Carrot & Chickpea' Soup... It is absolutely flipping gorgeous... very filling, highly nutritious and you also get lots of points cos it's so healthy ! (actually all Baxters soups are healthy hehe....). I don't like Heinz Cream of Tomato cos it tastes of cream (I cannot abide the nasty stuff) .. and gives me heartburn...

You need
Bag watercress
2 small/med potatoes
1 med onion
1 - 1.5 pints veg. stock (try 1 pint - you can always add more water later)
Little olive oil
I usually take most of the leaves off the watercress stems and leave for later. Fry diced potato, onion and watercress stems in the oil for a few minutes. Add stock and boil gently until potato is cooked through. Leave to cool for a while, then add the watercress leaves. When the mixture is cooled further put it in a blender until the soup is smooth.
I'm hungry now!
(putting the leaves in later keeps it that lovely green colour)
