Are tinned vegetables stored in salted water still good for you and count towards your five a day?

Yes, although I always try to get those with no added salt or sugar.
ideally your five are fresh
I once did an experiment to determine the vitamin C content of fresh, frozen, and tinned carrots - surprisingly the tinned carrots had the highest vitamin C levels!
Vitamin C in the form of ascorbic acid is often added as a preservative to tinned/bottled foods.  The food standards agency advice is fresh is best, frozen is a very close second and canned isn't so good but does still count.
