This is about as quick and easy as Italiano get!

PASTA WITH FRESH TOMATOES, HERBS AND GOAT CHEESE

INGREDIENTS

2 pounds fresh grape or cherry tomatoes, halved, or plum tomatoes, chopped
4 ounces mild goat cheese, crumbled
4 large cloves garlic, minced
3 tablespoons shredded fresh basil (More if you use dried)
2 tablespoons chopped fresh parsley
Salt and pepper to taste
1-1/2 tablespoons balsamic vinegar
1/2 cup olive oil
1 pound ridged penne, or similar pasta
2 tablespoons freshly grated Parmesan cheese, plus more for passing
In a large serving bowl, combine the tomatoes, goat cheese, garlic, basil, parsley, salt, pepper, vinegar and olive oil. Let stand 30-60 minutes at room temperature to macerate.

Meanwhile, cook the pasta according to package directions for al dente. Drain, and add to the tomatoes. Add 2 tablespoons of the Parmesan cheese. Toss well to combine. Serve immediately or let set to room temperature. Pass additional Parmesan cheese separately.

not sure if this is what your looking for but it is soo simple and tastes great:

3 or 4 chicken breasts
3 cloves garlic crushed
3 bay leaves
1/2 pint red wine
1 can of chopped tomatoes
flour
salt/pepper
oil for frying

coat chicken breasts in flour then fry for a few minutes on each side to seal the chicken

add crushed garlic. dont let it burn

then add the red wine and bay leaves

let it simmer for 10-15 mins and add the can of tomatoes

wait 5 mins and get your rice on and by the time the rice is done the meal will be ready

one other thing, i normally put black olives in near the end of cooking

only get to do this if i'm making the meal for myself as not many people i know like olives :(
