I always make one with chestnuts (I buy a tin). To these I add chopped celery, onion and lemon. I blend it all and cook it separately from the bird. Very tasty it is. As far as I recall, I add a knob or two of butter as well.
my gran has always made bread stuffing that i love and will never change from, literally dry breadcrumbs, finely chopped onion and melted, butter, mix it all together until its just moist, put in oven dish and bang it in the oven till its golden on top. sooo gorgeous with xmas dinner, i could never eat soggy stuffing!
