off the top of my head it is

 

72 hours for water

4-6 weeks depending on fat stores and expenditure

I think around 3 weeks, although mental irrregularities and full blown madness set in before this point. I believe sleep deprivation does lead to psychosis.

The world record for surviving without water was 18 days - a man was arrested in Austria for a minor offence and was locked in the police cells.  He was then forgotten and not discovered for 18 days.  I guess about a week would be more normal.  WVNBIVDB

I heard the stat of 3 weeks without food, 3 days without water and 3 minutes without air. Dunno about the sleep thing though.

Brother Yun of China fasted for 100 days without taking food or water while he was in prison.  He was nicknamed "the heavenly man" and wrote a book with this title because he said it was only by God that he was able to survive like that.(He fasted as a sacrifice to God and in return God kept him alive) Did the sermon in church say something about him?
