What is the word that head chefs shout before they give an order - sounds like samage or something? What does it mean?

It means "Ready to go"

Sorry I forgot to say the C has a squiggle to make it sounds like S.
The 'squiggle' is called a cedilla. It looks like a number 5 with the top flat bit cut off!
