Does the amount of salivary amylase vary as you eat different foods? So that the time it takes for the starch to be broken down vary if you eat an acidic food as it would inhibt the action of the enzyme?

At the rate most people eat their food, it makes no difference, the food will arrive in the acid environment of the stomach where it will be inhibited anyway.
