Hi, the OH has a bit of a nasty liver problem and he's been advised to eat low/fat free foods. My problem is he is the fussiest eater ever and i'm running out of ideas.
he likes soup but is getting sick of that now! the problems are he won't eat veg apart from sweetcorn and he can't eat dry foods it has to have a sauce or gravy with it. he loves eggs but is getting sick of ommlettes and i'm gettign fed up of making them!
Make a 'crustless 'quiche...or fritatta/tortilla....make the usual egg mixture plus any filling:peas and potatoes,peppers and sauted onions,broccoli and low fat cheese,bacon and onion. etc
Add herbs,salt and pepper to taste.
Pour into a greased baking tin....(one that is about 2" deep),and bake in the oven until golden and set on top. If you make one large enough,portion it out and freeze.
It can be eaten hot or cold.
If you can get hold of a slimming world recipe book they have a decent selection of very low fat recipes in them.
Grilled chicken is quite nice (sprinkled with cajun seasoning if you like it )and served with low fat greek yogurt as a sauce - I usually put a tiny bit of crushed garlic some salt and chopped coriander leaves into the yogurt and sometimes a bit of chilli fresh or powdered - but it might be too nice for your other half LOL !
It sounds cruel but perhaps you should buy a very low fat recipe book leave him to sort out his own food for a while - he might realise how limiting his eating habits are and get a bit more adventurous - there are some foods which are excellent for detoxing the liver but I would not dream of recommending anything - perhaps an NHS dietician could help him. its a permenant thing i'm afraid and at the mo its getting worse, it doesn't help that he isn't taking any advice from the specialist at all! stupid eejit he even had the cheek to text me ealier to tell me he wasn't feeling well......

try using quorn mince? I know it's not to everyone's taste but many people substitute it for real mince without much trouble - it's actually much harder to destroy in the cooking process. try cooking it in some stock and adding a carton of creamed tomoatoes/passata to it, and a tin of beans. Can you cook some veg for the flavour and then blend it so he doesn't know it's in there?
