It has to be fish, the freshest, say John Dory or Halibut, filleted and gently poached for three minutes then grilled with seasoned fresh breadcrumbs for another minute. Serve tossed into a mixed leaf sald with your favourite dressing plus a large swig of Cloudy Bay Sauvignon Blanc! Bet your salavating!
here's my favourite quick meal - pasta with chicken & tomato sauce. Gently fry two diced chicken breast fillets with half an onion and a clove of garlic (both chopped), and some Italian seasoning in a tablespoon of olive oil. When chicken is almost cooked (7 - 8 mins), add a tin of chopped plum tomatoes and simmer for another couple of minutes. Add a teaspoon of tomato puree if the sauce requires thickening. Serve with heaps of steaming pasta. The best thing is that you can add all sorts of leftover veg, or some cayenne pepper for a spicy version. It's never the same dish twice! Enjoy. (Oh yes, and you can drink whatever you like with this..)
Line an ovenproof plate with cheese - put slices of tomato round the outside of the plate - break 1-2 eggs and put the whites only into the centre of the plate - put the plate in a very hot over until the egg white is almost set - pop on the yokes. Cook until yoke sets - NOT LONG or it will go hard. Eat with lumps of French bread.
Hot Chicken Sandwich - get a breast of chicken (corn feds good) fry on a medium heat in butter and olive oil, do each side for apprx 3 mins then cut into strips put back in the pan, add some tarragon, garlic pepper cook until slightly brown, get a fresh loaf, roll butter then just add the chicken, some lemon mayonaise - lovely
