How far in advance can you make pannacotta? I mean does it stop being set after a while or any other problems? Would it be ok to make it 48 hours in advance?

Should be fine. Keep it in the fridge. It is only like making a creme caramel or other pudding. Eventually it will go off, but not in a couple of days.

Great - thanks grasscarp. I just wanted to check that it wouldn't become un-set or anything by sitting too long.
A friend made me one of these recently (and at some time previously) and it was really good.
make sure you cover it with cling film to stop it getting a horrid skin

I made one a while ago and was suprised just how easy it was to make, but yet it looked and tasted really fancy!

Just got your tip about the clingfilm a bit too late jack but I will do that next time. I cant remember getting a skin last time but I had tipped it upside down so at least it wasn't visible!
