Woodcock, deer, partridge and quail are the meats.

The carving terms are from this list:-

slice,break, cut, haunch,wing,thigh,fillet,neck,bone or strip.

 

searched hi and lo on net and dictionaries to no avail.  Housebound at mo, so cannot get to library to check out Mrs Beeton.  Any suggestions gratefully received.

I'm pretty sure that deer is a haunch - as in haunch of venison.
def haunch of venison
fillet of venison
quail wing? (partridge and woodcock too small)

Schotts Food & Drink says:

thigh -woodcock  break -deer   wing - partridge

Yes, thank you so much.  I forgot I had bought two of the Schotts books many moons ago, so dug them out after your answer.  what a wealth of facts in them.  makes you wonder what sort of minds these authors have to know such weird and wonderful things.
