Drain the pots and while hot sprinkle the bacon on top and either chopped buffalo mozarella or grate the cheese of your choice over it. Also add quartered sweet cherry tomatoes and wild rocket and a tiny dash of balsamic (optional).
I made this one up some time ago to use up bits. It turned out rather well if I do say so myself.

Similar to Mortartube ......... fry off lardons and a little chopped onion, add a tin of new potatos slices, and a little garlic and herbs, some cheese (Reblochon ideally - but rare in UK, so anything will do, preferably something not too fatty - try edam, mozarella, chaume etc) add a splash of white wine if you have any (if not don't bother) and finish by simmering with cream (single) and season to taste, but use plenty of freshly ground black pepper .... serve with a green salad.... et voila..... lovely French tartiflette ............... here is a recipe, but I don't use one, just guess work and vary quantities depending on numbers for lunch.
