First, find the video you want on YouTube.
Then open another browser window and go here...
http://keepvid.com
Copy the URL from YouTube (ie. the "http://...") and paste it into the KeepVid website.
Right click the resulting link to the video to store it on your hard drive.
The video you've just downloaded will either be in ".avi" or ".flv" format. You'll then have to convert the video into a format that can be played on your iPod - I can't really shed any light on this because I haven't got an iPod! However, once you've found out the correct format you can convert the videos by using this rather spiffing piece of free software...

The website's poor and you'll have to hunt for the download link but the software is superb. It can convert ANY video into just about ANY other format. Most commercial software isnt as powerful as this.
As for copying audio onto a CD from YouTube (or anywhere else for that matter) get Freecorder from here
http://applian.com/sound-recorder/
It works as a plug in to your browser and intercepts any incoming audio and saves it to an ".mp3" file.
Then just burn the MP3s to an audio CD in the usual way.
