What is the word (possibly only used in USA) for collecting all the staff tips into one pot then distributing evenly amongst themselves. Thanks, Andy

The front-of-house staff receive the tips because they are seen by customers, but kitchen staff who contribute to the service are often missed out, so this is a fair way of using the tipping system.
