Im self employed and buy products for cash and sell on invoice, does it mean i get taxed on all the cash i take out, because i dont get any receipts for any

Assuming you are being honest then the form your day to day dealings take are irrelevant. Simply speaking the amount you are taxed on is your net profit, ie after all expenses have been taken out, this is reflected in the tax return, if you have an accountant get him/her to explain it in detail.
The Revenue Department is entitled to ask you to prove your expenses, so if it is a purely cash basis then there may be a problem. They may also be interested to know who is selling goods to you for cash to ensure that person is declaring the sales.
If in doubt, talk to an accountant or the Revenue helpline, don't wait to be audited when the problem could be a lot worse!
