Usually a percentage of the total payment. I have never heard of a surcharge for a debit card only a credit card though! Are you definitely sure it is for using a debit card and not some hidden admin charge? I would give them a call to clarify what it was.
when i put my card details in i ticked the switch box which is what i know my card as. but it wouldnt accept this title so i clicked on visa switch as its also known as a switch card.it is actually a maestro bank of scotland switch or debit card. for both options it said there was a 5 percent charge for using them. any idea ?
A Visa debit card is a debit card, not a credit card.
Who have you made the payment to? Ryanair charges 5 per passenger each way for payment by credit and debit cards.

5% seems steep for a debit card!
In fact their website says they charge 0.5% not 5%. On http://www.sunmaster.co.uk/tandc.php ) they say:
Please note there is a 2.5% credit card charge for credit card payments and a 0.5% charge for debit card payments
I calculate that for a 701 holiday they should have charged you 3.51 not 17. It seems they have charged you the credit card fee of 2.5% instead of the 0.5% debit card fee.
Go back and query it with them.
