Where can I buy Key Lime marmalde in Britain?
I know that Roses produce it, but they export it all to the USA!

Ingredients
3 /4 limes depending on size
1 lemon
1.5 pint water
2.5lbs sugar. (use 3lb if you want Rose's sweetness)
Peel the limes thinly and cut the rind to the required size for the marmalade. Halve the fruit, squeeze the juice and remove the pips. Cut the fruit residue into pieces and tie into a piece of clean muslin (Hanky will do (CLEAN!).
Place the rind, juice and water and muslin bag into the largest glass bowl or casserole that will fit onto the microwave turntable. Cover the bowl with clingfilm and cook on HIGH until the rind is soft, about 18 - 20 minutes.
Remove the muslin bag and add the sugar, stir until mostly dissolved and heat on High for a couple of minutes and then stir, until the sugar has dissolved.
Microwave then on HIGH to bring to the boil and then cook for 30 - 40 minutes until a set is obtained. (Tp test for set, put a clean plate into the freezer. Take a spoonful of the marmalade and put onto the cold plate and leave in the fridge for about a minute. Push your finger through the marmalade on the plate and if it starts to wrinkle and hold the shape you make, set has been reached.
Let it cool for half an hour and pur into washed warm jars. Allow to get cold and put on lids and label.
(Makes around 4 lb and only one bowl and a dish to wash up and it won't stick)
