Hi all, hope you're having a good Sunday - it's a wet one here in Cambridgeshire.
Yesterday I made chicken breast stuffed with ham, sundried tomatoes, mozzerella cheese, seasoning & herbs, all wrapped in parma ham - it was lovely.............. now there's an idea of a meal for someone

I made mine stuffed with apricots, walnuts, garlic, parsley, lemon juice and olive oil, whizzed to a stuffing texture.

I used to do that a lot jack...when I had a family to cook for.....sadly it is a bit of a hassle for just me..... ;-((
I have never stuffed a chicken breast so can you tell me how to it and give me the quantities of the ingredients. I have family staying shortly and this would be a change.
Jack, that sounds scrummy! Another one I once had and don't immediately diss it, it was gorgeous....chicken breast stuffed with cream cheese and strawberries....mmmmm...

Instead of making a pocket-as one of the recipes on your link-I use a rolling pin to either pound or roll flat the chicken breast. Great for relieving tension...lol
Another good stuffing is spinach,garlic&chive philly and sauteed mushrooms.
