Sausage casserole veg!

Hi all!
Tomorrow night I am making dinner at my boyfriends mums for the 3 of us. Normally with sausage casserole I serve it with Jacket potatoes, and would put onions, carrots and leeks in it whilst its cooking. However she doesn't really like carrots, or leeks in casseroles, so i have said I would find something else to put in, only I have no idea what!
Any help would be very much appreciated!!

Was doing Jacket potato as a change to sweet potato, as we have either sweet potato or butternut squash with pretty much every meal we have with his family! Not that i am complaining, I love the stuff!

Thanks for your answers!
I am going to put onions, mushrooms and carrots (fella said his mum can pick them out if she doesnt want them!) in the casserole, and then do some sweetcorn, peas and beans of some sort to serve it with!
