Can anyone recommend a hotel in the northern half of the island of Ireland where vegan/vegetarian tastes are well catered for?

The responses so far give details of establishments specialising in vegan/vegetarian food. We are a couple, one of whom is vegan, the other preferring traditional hotel fare. The best I can hope for, probably, is a recommendation for a hotel where the food is good and the chef is prepared to make a bit of an effort beyond the inevitable stirfry! Am I looking for the impossible? Sligo, Donegal, Mayo, Cavan, Westmeath are the conveniently accessible areas for us,pinktwink. Thanks again.
just book into a local hotel and check out the local restaurants that cater for vegetarians

Donegal abey or the mill park hotels
I would go with them two counties then the Hodson bay in Athlone in co westmeath or the mullingar house hotel
