Surplus mint

The mint in my garden has run amok! I am planning to dig most of it out and put the remainder in pots but does anyone know how to "preserve" some of the mint leaves for use in the winter months.

For more on marking an answer as the "Best Answer", please visit our FAQ.Cut off whole stalks, tie them together and hang them up high in the airing cupboard. leave them there and check once a week, when they are dry and brittle remove the leaves and put in jars. You now have dried mint to use all year.
Or - clean out an empty 2 litre soft drinks bottle eg lemonade etc. Strip about 2 good hand fulls of fresh leaves from the plant and bruise with a mallet or morter and pestle. Put into a jug and fill with boiling water, leave to go cold. Strain well, then pour the liquid into the bottle and fill with cold fresh water. Keep in fridge, it's makes a lovely refreshing drink.
