I think actually that most "fresh" fish that's sold DID come out of the sea the day before. However, I concede that tuna caught near Florida or Mexico is more likely to be shipped than flown to Scotland. They obviously do use the preservation techniques Artemis described though.
You should ask the fishmonger next time you pick some up. Otherwise the packets might be labelled, like strawberries in Sainsbury's - they say exactly which farm they came from, and sometimes when they were picked.
